Lemon Salad Dressing that Will Make You Pucker!

There is something very special about this bold lemon salad dressing. It is made using the entire lemon including the entire lemon peel. The peel really gives it a kick!! It is a refreshingly flavorful dressing that adds a powerful citrusy zing to any salad, vegetable, or rice dish. In our house, we like this tangy dressing on everything. Blended with olive oil, fresh mint, basil, parsley, red onion and the whole lemon, this sensational dressing has a classic Mediterranean flavor. This is a tasty way to serve cauliflower. I never thought I would be making an authentic Indian cuisine recipe.  Cauliflower Aloo Gabi is a flavorful vegan side dish that is both beautiful to look at and outrageously delicious. Quick Yellow Squash Recipes for summer entertaining

Got yellow summer squash? Try this easy recipe that can be made into a quick summer soup or a delicious summer salad! Today I received 5 pounds of golden yellow summer squash from my CSA. In addition, I received 3 pounds of carrots, two different kinds of lettuces, chard, 2 pounds of string beans, a pint of raspberries, lots of cucumbers, 2 eggplants, scallions, etc. When you belong to a CSA you need to be ready to prep, cook, and freeze on the day you bring everything home. Otherwise, you run the risk of the vegetables deteriorating! I love the simplicity of fresh vegetables right from the farm. They taste so good that they very little seasoning. Zucchini Noodles ( Zoodles) and Purple Cabbage in a heavenly ginger sauce

When I was growing up, one of my favorite dishes was cabbage and buttered noodles. I remember it being so tasty, but in retrospect perhaps not so healthy. I Love pasta but hate the empty carbohydrates and calories of even gluten free pasta. That's why I make zoodles- which are simply sculpted zucchini- made with a simple tool called a sprializer. Zoodles can be substituted for pasta in any recipe and that's what I used in my zoodles & purple cabbage in ginger sauce. In order to make the zoodles in seconds, you will need to use a spiralizer. This is the one I use and like this style the best. I've tried the cheaper ones that you hold in your hand, but they just don't work for me since I make so much. Remember when I posted the tutorial for how to fire roast an eggplant on the stove ? I knew that you would need to know how to do it for this recipe. Fire roasting an eggplant over an open flame makes the eggplant tender, smoky, and yummy! ( Here's how) ! Hola! Hola!  In honor of Cinco De Mayo I'm making my gluten free Riced Cauliflower Fiesta as a side dish for tomorrow tonight's dinner! The Mexican flavors are amazing and it is so easy to make! Grilled or roasted vegetables are the perfect gluten free side dish. I happen to love eggplant and find that fire roasting an eggplant creates a unique flavor that is absolutely delicious. If you want to get away from the SAD ( Standard American Diet) don't reach for gluten free prepared products. Think vegetables and find a variety of healthy interesting ways to make them. My favorite way to make eggplant is to grill the entire uncut eggplant over an open flame. Where do I get the open flame? Right on the burner of my gas stove in my kitchen!!
