Low Calorie Cauliflower, Cabbage, and Cumin Soup

Do you want to eat more cruciferous vegetables and add low calorie soups to your diet ? So do I- This low calorie and delicious easy to make soup will fill you up while helping you lose weight! It was a cold Halloween night, so I made a fast and easy seasonal soup to keep us warm! For some reason, despite it being 75 degrees the day before, we experienced another cold Halloween. It was only 44 chilly degrees for the little ones to do their trick or treating. It's always been my custom to make soup for dinner on Halloween . I feel a big bowl of piping hot soup hits the spot before venturing out in the cold. My soup this year, was created from vegetables that I received from my organic CSA: Chinese cabbage, cauliflower, onion and fresh dill for the garnish. I blended in some white beans to give the soup some heartiness and at the same time make it creamy. My good friend and fabulous cook , Laura, who co-authored   Food No Matter What!  was visiting while I was making this soup. ...

Mild and Creamy Cauliflower Kale Soup -

I love making easy seasonal soups that are both tasty and healthy. In this recipe cauliflower and kale, two cruciferous vegetables, team up with coconut milk to make a mild creamy fall soup just in time for the cooler damper weather. I adore soup and can't think of a better way to make sure I get my fill of antioxidant rich vegetables. In addition, this vegan soup has sauteed garlic, onions and turmeric , goes a long way, and is deliciously satisfying. Despite that the four vegetables are very bold flavored vegetables, the soup actually tastes mild and pleasant . It's a great way to include more dark greens into your diet, especially for picky family members who will not actually detect the taste of the kale in the soup. This time of the year, I don't mind turning on the oven to bring a little extra warmth into the house. This recipe calls for roasting a cut up head of cauliflower, which takes about 45 minutes .  Then the roasted vegetable is added to the soup pot where the...

Roasted Carrot Soup with Ginger, Turmeric, & Cardamom

I love ethnic spices, especially in soups. This roasted carrot soup is rich in warming spices of ginger, turmeric, and cardamom with a touch of cooling coconut milk. This easy soup is low in calories, low in fat, vegan, and and naturally gluten free ( like all my recipes)  I received carrots, onions, and potatoes this week as part of my CSA farm share. I immediately started to think soup! Roasted veggies make easy and flavorful soups One of my favorite and easiest ways to make soup is to use roasted veggies as my base. I got the idea when I had a significant amount of vegetables in the refrigerator, and we were leaving for vacation. I needed to find a way to cook the veggies and freeze them. I decided to roast them all. The result was a deliciously tasty blend of incredibly flavorful veggies.  My daughter in law Wendy said, " Why don't you just blend those roasted veggies in the Vitamix with vegetable broth." That's exactly what I did and to...

Vegetarian Tortilla Soup just like in Mexico

Tortilla soup is one of my favorites!  Whenever I go to Cancun, Mexico on vacation, I am jealous of everyone eating and raving about the tortilla soup. It always looks so good, but it is made with chicken and chicken broth, and I am a vegetarian. I've searched for a vegetarian tortilla recipe, but have never really found one I liked until today. Today, I found a good recipe on    A Year of Slow Cooking    that looks just like the soup in Mexico and guess what? It's made in the crock pot! Does it get any better than that? Yes, it's gluten free, vegan, and made from real food ingredients. I knew I was going to like this one.  I love the ease of crock pot recipes and that everything is in one pot and there is so little mess. I also love that once the ingredients are assembled and in the slow cooker, I can walk out of the kitchen and do other things. The timer calls me when dinner is ready!  Although this recipe uses a 6 quart slow cooker, I'm sure ...

Quick Yellow Squash Recipes for summer entertaining

Got yellow summer squash? Try this easy recipe that can be made into a quick summer soup or a delicious summer salad! Today I received 5 pounds of golden yellow summer squash from my CSA. In addition, I received 3 pounds of carrots, two different kinds of lettuces, chard, 2 pounds of string beans, a pint of raspberries, lots of cucumbers, 2 eggplants, scallions, etc. When you belong to a CSA you need to be ready to prep, cook, and freeze on the day you bring everything home. Otherwise, you run the risk of the vegetables deteriorating! I love the simplicity of fresh vegetables right from the farm. They taste so good that they very little seasoning. From the Farm Add caption I decided to cook the carrots and squash together in a large sauté with some onions.  I then divided the sauté in half and made two different recipes from that one sauté.  Of course both recipes are gluten free and vegan. Recipe 1 : Yellow Squash Quinoa Salad ( eaten hot or cold as a quinoa salad) Recipe 2:...

Why I eat Celery Every Day

What's all the fuss about celery ? I recently visited the website of Anthony Williams . He is a medical medium who gives nutritional advice on Hay House Radio. He says that celery is one of the vegetables that can help alkalize and mineralize your body- so it's great for healing what ails you. Many sources say that disease doesn't like to live in an alkaline environment- and guess what celery creates? ( alkalinity) . For healing, he recommends a large glass of organic celery juice daily and drank on an empty stomach first thing in the morning. My morning juice Celery is a Part of my Morning Juice I've always included organic celery in my morning fresh vegetable juice. I use carrots, celery, cucumber, beet, romaine lettuce, parsley, kale. I switch around greens as each green offers a different benefit. Sometimes I use collard greens instead of kale or butter leaf lettuce instead of romaine lettuce, cilantro instead of parsley. In addition, I recently started adding green...
