Butternut Squash Parmesan

I I'm always looking for new ways to enjoy butternut squash, especially when it's in season and plentiful in the fall. This Butternut Parmesan casserole is simple and unique. I would have never thought that cheese would pair well with the squash! But it really does! I got the idea from Trader Joe's . They sell a frozen Butternut Squash Parmesan package,  but its not gluten free. The other day when I was shopping, they were offering taste samples. Everyone was raving. So, I thought I would try to make my own gluten free version. I looked at their ingredients to get some ideas. I was happy with my final product. I'll never know if it tastes anything like the one at TJ's. Butternut squash is a low fat vegetable that is rich in Vitamin A ( good for the eyes), has more potassium than a banana per cup, provides a fair amount of fiber, Vitamin B-6 and other vitamins and minerals as well. It's a healthy vegetable to add additional nutrients to a gluten free diet. I...

Why I Join a CSA Farm for the Summer

For the past 10 years, I have participated in a CSA ( Community Supported Agriculture) which is an organic community farm. You pay a share upfront in the beginning of the season and then you are entitled to whatever grows all spring, summer, fall. The farmers designate the amounts each week based on the bounty. This is the room to pick up your produce I purchase a half shar e which means I pick up every other week.   It's too much work for me to drive to the farm each week, pick produce and flowers in the fields, and then take everything home and  prep the food the same day. Every other week works better for me because it is a job! Today was my CSA farm pick up day . The way it works is that certain types of the produce are already picked and just ready to be bagged; However, some of the produce you must go out in the fields and pick yourself. The day that I pick up requires a lot of work to pick up, clean, and to prep all the vegetables. Once you get the vegetables home...

Cauliflower Aloo Gobi from an American Kitchen

This is a tasty way to serve cauliflower. I never thought I would be making an authentic Indian cuisine recipe.  Cauliflower Aloo Gabi is a flavorful vegan side dish that is both beautiful to look at and outrageously delicious. Indian spices are rich and pungent adding quality nutritive value to this great side dish! ( Did you know that spices are high in antioxidants and nutrients?) I've never made Indian cuisine before. As much as I love it, I've only eaten Aloo Gobi in an Indian restaurant. Did I mention that this recipe is also gluten and grain free, making it perfect for my gluten free diet. Yes, it is real food, just the way I like it. Easy Easy Easy-    Can you steam and saute? That's all you have to do. The most difficult part of this recipe was getting the spices. I always have turmeric and cumin in the house, and last year I invested in garam masala ( which is a combination of cumin, cardamom, coriander, black pepper, cinnamon, cloves and nutmeg- I keep it in th...

In addition, I've added high fiber chia seeds, walnuts, fresh and dried spices, and chopped vegetables.( see my post on the amazing benefits of chia seeds ) Easy to Make  I popped everything into the food processor , made the mixture into patties, then baked the patties in the oven! This vegan recipe will make at least 8 hearty burgers for your summertime enjoyment. 3 Ways I Eat Them I eat my burgers on a plate topped with tomato, avocado, scallions, and lemon juice Bean dishes are very popular in Mediterranean countries , and the Mediterranean diet is touted for being one of the healthiest in the world. These burgers can be eaten by themselves or Topped with chopped avocado, toma...
