Healthy Halloween Snacks using Vegetables & Fruit

Halloween is definitely the season for too much candy and an overload of sugar. No matter how hard we try we just can't seem to avoid it. There are some things you can do. If you are having a party at home or at school, why not focus on some Halloween type snacks that are good for you and fun too! These ideas are gluten free/ grain free and can be made vegan.  I was visiting my friend Gail and she served this adorable vegetable dip with cup up vegetables. Everyone oohed and ahhed at her easy and clever display that was totally sugar free and healthy. This could be done with humus, dip, or even guacamole. You could use any kind of cut up veggies and any color pepper. Gail used toothpicks to hold the olives in place for the eyes and nose. Watermelon Limeade is simply Blissful

There is no getting around it, this recipe for fresh watermelon limeade is an all natural drink that is beautiful to look at and blissful to drink. I made my drinks without alcohol, but you could easily add some light rum if you like and then call them cocktails. Whatever you choose, the finished product will be outrageously delicious!  With a strong blender, I can make these in just minutes using three real food ingredients: watermelon, fresh organic lime, and raw organic honey. It sounds like it would be terribly sweet, but it wasn't. I used a quarter of a fresh organic lime including the rind which pulverized completely in my Vitamix. I think that is what gave it a tarter flavor! Don't leave out the honey I thought about leaving out the honey, because watermelon is already sweet, but the honey imparted  a lovely flavor. Guilt Free Baked Donuts - GF and Easy for National Donut Day

Today is National Donut Day and Dunkin Donuts is giving away a free donut. For those of us who wouldn't dream of eating a fried, chemical laden, white sugar, white flour donut  -whether gluten free or not, I have a better guilt free alternative! These beautiful donuts are baked , made with high fiber almond and coconut ( gluten free/grain free ) flours, and lower glycemic coconut sugar. These ingredients are all available at Trader Joe's, Whole Foods, and health food stores. In fact, many supermarkets carry almond, coconut flours ,and coconut sugar in their gluten free isles. You can see that my ( gluten free) donuts look fabulous , and I can tell you that they taste fabulous too! Are they difficult to make? Absolutely not! The prep is 5-8 minutes and they bake in the donut pan in just twenty minutes. If you want to glaze it in melted dark chocolate chips- that's another 5 minutes! Egg Free Banana Coconut Macaroons ( GF)

These easy egg free banana coconut macaroons are made from a few simple gluten free and vegan ingredients. I whipped them up with my grandkids in just 3 easy steps in less than 25 minutes from start to finish! 3 Easy Steps:  1. Mix ingredients in a bowl with a spoon 2. Shape into balls 3. Raspberries and Chocolate- 1 Point Plus

This is a great idea for a decadent but low calorie healthy dessert.  I'm back on Weight Watchers ( trying to lose 10 pounds) and am searching for good choices when I want a snack. I saw this raspberry and chocolate dessert on the Weight Watchers blog, and it was love at first sight and bite. I couldn't wait to try it . I wasn't disappointed. I would have loved the chocolate chips by themselves or the raspberries by themselves, but together - well it brought me to a whole new level. 8 raspberries each filled with one semi sweet chip is only 1 Point Plus for all of them! YUM! Raspberries and chocolate are a perfect match . You still get to eat your healthy fresh fruit ( Zero Points Plus) enhanced with just a hint of dark chocolate ( dark chocolate is good too and provides antioxidants and magnesium) A entire tablespoon of semi sweet dark chocolate chips (about 16 chips) has only 2 Points Plus. Cranberry Chocolate Chip Oatmeal Cookies

These soft and chewy cranberry chocolate chip oatmeal cookies are a perfect treat for Thanksgiving or Christmas. Everyone expects to eat cranberries for the holiday, so why not serve the slightly tart berries in a delicious cookie ? My little granddaughter came to visit and the first thing she said to me was, " Let's bake cookies". I thought about what I had in my pantry and decided to bake these cranberry chocolate oatmeal cookies. It's a fairly common recipe that is sometimes made with white chocolate chips or the dark chocolate chips. I had the latter in the house. Pumpkin Rice Pudding - gluten free and vegan

Looking for an easy, yet elegant dessert? This creamy pumpkin rice pudding is simple to make and still tastes sensational!  What a treat for Thanksgiving or Christmas. If you like the taste of pumpkin and you like rice pudding, you'll love this perfect combination. The ingredients are healthy, and the recipe is as easy as just making rice.  In addition, it is allergy friendly as it has no eggs and can be made with coconut milk. I love that the recipe meets gluten free, vegetarian, and vegan standards. I was intrigued with the idea of adding pumpkin puree to this already creamy dessert, and I wasn't disappointed. I would have loved to have topped it with whipped cream or coconut cream, but whipped cream is my greatest weakness and just having some in the house , well I would have eaten it all.
