How to Freeze Whole Lemons for Convenience and Ease

Did you know that you can freeze whole lemons and limes and always have one handy for fresh lemon juice or lemon zest! I buy organic lemons or limes by the bag at Trader Joe's.  They usually are good for about a week. Sometimes I just don't get to use them fast enough, so they start to spoil. While browsing Pinterest, I found a post that says you can freeze lemons or limes for convenience and ease! Who knew? I love the idea!  Not only does it prevent waste, but you will always have lemon in the freezer if you need some. Frozen lemons/limes defrost quickly and are great to have in a pinch. You can even buy extra organic lemons when they are on sale and keep them frozen until you need them.  How to Freeze Lemons and Limes:  Wash the lemon or lime well and pat dry. Easy Quinoa Salad In a Hurry

Leftovers can be recreated into something special! I was in a hurry and used three leftovers to create a quick and tasty quinoa salad. I found out that tossed salad, leftover cooked quinoa , and homemade lemon dressing taste great together. Sometimes you discover something by accident that turns out to really work well !   That's what happened to me today. I had leftover salad from last night's dinner, leftover bold lemon salad dressing, and leftover red quinoa. I was looking for a quick, yet healthy lunch and decided to combine all three of them together in one bowl. I mixed, ate, and really enjoyed!  My creation tasted great, involved no prep, and was satisfying!   What more could I ask for? Although this salad is a simple idea, it's gluten free, vegan, and nutritious! There's not much more to say! Lemon Salad Dressing that Will Make You Pucker!

There is something very special about this bold lemon salad dressing. It is made using the entire lemon including the entire lemon peel. The peel really gives it a kick!! It is a refreshingly flavorful dressing that adds a powerful citrusy zing to any salad, vegetable, or rice dish. In our house, we like this tangy dressing on everything. Blended with olive oil, fresh mint, basil, parsley, red onion and the whole lemon, this sensational dressing has a classic Mediterranean flavor. Easy Summer Salad with Colors of the Rainbow

There is no better time to make flavorful salads than during the summer when the produce is ripe off the vine, juicy, and plentiful. I like to use tomatoes in the summer as the base of my salads instead of lettuce.  I had company last night, and I made this amazing summer salad! I used most of the veggies that I received from my CSA this week:  tomatoes, cucumbers, fennel, cabbage, celery, red onion, fresh basil, fresh mint, plus I added some sliced black olives and thick slices of avocado sprinkled with cumin. The salad was pretty to look at and absolutely delicious to eat. If you want to make a meal out of it, you can add in a some chickpeas! Too hot to even eat outdoors I made this salad in the morning, covered it well and didn't dress it until we came to the dinner table. Black Beans Make a Great Summer Salad

Looking for a quick but satisfying summer salad that can serve as lunch or a light dinner? My black bean salad is one of our favorites. It's light but filling and packs lots of fiber, nutrients, and taste. The best part is that it can be ready in under 10 minutes.  I use organic canned beans for convenience and simply chop up some juicy summer tomatoes, sweet red onion, fresh summer basil, and avocado. When I have left over rice, I add that in as well. Splashed with freshly squeezed lime, this salad looks pretty and tastes delicious. Just assemble and serve. This is also a great recipe to bring to a pot luck or BBQ since it is delicious at room temperature too. It travels well or can be assembled when you get to your get together. Green Bean Salad with Balsamic Reduction Sauce

Looking for a perfect side dish to make for Memorial Day Weekend? I could eat this delicious fresh green bean salad every day. It is easy to make, travels well, is great served at room temperature, and is gluten free and dairy free. It does contain sunflower seeds and almonds, but they can be omitted if nuts are a concern. The spring flavors of red onion, tomatoes, green beans, and sunflower seed s are laced with my sweet balsamic vinegar reduction dressing and is really delicious. Did I mention there is no oil, so it is relatively low calorie too and works for low carbohydrate too!  If you are not vegan, you can add crumbled blue cheese for an even more enticing dish !
