Soothe Your Tummy and Your Mood

Healthy Halloween Snacks using Vegetables & Fruit

Halloween is definitely the season for too much candy and an overload of sugar. No matter how hard we try we just can't seem to avoid it. There are some things you can do. If you are having a party at home or at school, why not focus on some Halloween type snacks that are good for you and fun too! These ideas are gluten free/ grain free and can be made vegan.  I was visiting my friend Gail and she served this adorable vegetable dip with cup up vegetables. Everyone oohed and ahhed at her easy and clever display that was totally sugar free and healthy. This could be done with humus, dip, or even guacamole. You could use any kind of cut up veggies and any color pepper. Gail used toothpicks to hold the olives in place for the eyes and nose. Brussels Sprouts and Caramelized Red Onions

Looking for a delicious side for your holiday dinner? Don't let the simplicity of this recipe fool you. Roasted Brussels sprouts and caramelized sweet red onions are a one step sensational recipe that is very easy to make.  Each Christmas, I try to come up with a red and green side! Last year, I made the beautiful Christmas Slaw Salad that was colorful, crunchy, and festive. This year's recipe has red and green colors that are more subtle, but the vegetables melt in your mouth. During November and December, it's usually easy to find fresh Brussels sprouts on the stalk ( I found them at Trader Joe's) It doesn't get much fresher than that. However, you could use fresh Brussels sprouts from a bag as well . Unfortunately, frozen won't work. Eggnog Baked Doughnuts ( Gluten Free )

Doughnuts made with eggnog ?  Perfect for Christmas morning AND Yes, they are fabulous and very easy to make. Do you like eggnog? You will LOVE these healthy baked doughnuts made with eggnog ( I used So Delicious brand non dairy eggnog that is on the shelves for the holiday season ) but use any eggnog you like. If you want to use the vegan Nog, it comes in a carton and is located on the shelf , not the refrigerator case. Low Carb, easy, delicious and nutritious describe these real food cauliflower snow patties that are baked in the oven, not fried. They are my new low carb Hanukkah latke! Lebanese Stuffed Onions

Lebanese Stuffed onions ( bassal mahshi )  is a family favorite  that was actually my mother in law's recipe that she has been making and perfecting for many years. She serves it on holidays and special occasions, and it is absolutely delicious. My mother in law's name is Toni ( short for Fortunae) and is called Nona by her 10 grandchildren and 7 great grandchildren. Born to an Italian mother and  raised, and lived in Cairo for 45 years prior to coming to the US - she is a great Middle Eastern cook.  Everyone is thrilled when she goes to the trouble to make these little stuffed gems. Her recipe is made using ground meat, spices and rice; my recipe is vegan,  yet it boasts the same delicious Middle Eastern spices and the great flavors as my mother in law's recipe. Best Ever Chanukah Potato Latkes Baked ( Hanukkah)

Hanukkah will soon be upon us,  and it's time to start thinking about planning a festive menu. ! The most traditional food to eat on Chanukah is Potato Latkes! If you are looking for a really good latke that is baked, not fried- This is it! Usually, the baked ones do not taste as good as fried- these do ! Just think, you can spare yourself the extra calories without giving up the taste! A few years ago, I had a  Hanukkah Chanukah get together and served 3 large trays of homemade latkes. Each tray held a different ( gluten free) latke recipe. One tray was fried, one tray was baked, and another was fried but a different recipe. Guess what! In a blind taste test, hands down, everyone loved my baked latkes the best- so I'm sharing the crowd's favorite recipe today.
