Another Falafel Cracker Recipe with Za'atar ( GF)

I know I made falafel crackers last week , but this is a totally different recipe. It's lighter and crispier than the previous recipe, so you might want to give these a try.  I had never made crackers before last week, but they are really fast, easy, and fun to make. A batch of these 50 crackers from start to finish took me under 30 minutes ( I didn't count the 15 minutes of chill time). In addition, they are gluten free, dairy free, egg free and delicious. We love falafel and it's interesting spices,  so naturally I knew we would love these tasty falafel flavored crisps. What makes them taste like falafel? The chick pea flour, the sesame seeds, the cumin, the turmeric, the coriander and the spice blend called za'atar. What is za'atar or zahtar? Za'atar is a prepared spice blend that is used in many Middle Eastern countries.Although the recipes might vary, Za'atar may be made of any of the following spices: ground thyme, oregano, marjoram, sumac, hyssop an...

Falafel Crackers Anyone?

This is an interesting gluten free snack idea and entertaining idea !  Can you imagine crackers that taste like falafel! For those of you who have tasted falafel before, you know you are in for a treat. For those who have never had falafel, you will have to trust me on this one. I assure you that the recipe is truly flavorful and is reminiscent of falafel. I found this recipe on a blog called May I Have That Recipe - a delightful blog created by two sisters who post vegetarian, vegan, and kosher recipes. This recipe happens to be gluten free as well - as many of their recipes are; many of their other recipes can be easily adapted to be gluten free. The Flour There are different types of gluten free flours that you can use to make gluten free snacks. This recipe calls for G arbanzo bean flour  ( chick pea flour) which can be found online or in most health food stores or health food isles in the supermarkets. I like this Garbanzo bean flour :  Bob's Red Mill Garbanzo Bean F...

Cauliflower Crusted Mini Pizzas

Low carb individual sized gluten free mini pizza crusts are great to eat for a healthy lunch, dinner, or snacks. Once you get the hang of ricing cauliflower in your food processor ( very easy in 5 minutes) , this recipe is a cinch! Cauliflower is a low carb yet nutrient rich vegetable that you can substitute for grain in most recipes and it tastes great this way.  I can make these mini pizza crusts without using any flour . That means I can eat not only a healthier crust but also eliminate the high carbohydrate content of regular dough . That works for me! The recipe makes 12 mini pizza crusts . I calculate that each crust is just 1 Point Plus on WW+ the topping. Yes,- I'm back counting points on Weight Watchers after a long time partying! I put on some weight, struggling with my clothes, and realize it's time for me to start counting those points again and eating more consciously. I know that I need to start my day with a food plan. It's just that simple- otherwise the l...

Cranberry Chocolate Chip Oatmeal Cookies

These soft and chewy cranberry chocolate chip oatmeal cookies are a perfect treat for Thanksgiving or Christmas. Everyone expects to eat cranberries for the holiday, so why not serve the slightly tart berries in a delicious cookie ? My little granddaughter came to visit and the first thing she said to me was, " Let's bake cookies". I thought about what I had in my pantry and decided to bake these cranberry chocolate oatmeal cookies. It's a fairly common recipe that is sometimes made with white chocolate chips or the dark chocolate chips. I had the latter in the house. These tasty quick and easy cookies would also make a nice addition to your Christmas Cookie repertoire .  No mixer is needed; you just stir the ingredients with a large spoon. They are very festive because they are full of red dried berries and rich chocolate. Unlike highly processed cookies, these winners are made from real food with whole grain nutrition. I always feel better serving my grandkids somet...

Pumpkin Rice Pudding - gluten free and vegan

Looking for an easy, yet elegant dessert? This creamy pumpkin rice pudding is simple to make and still tastes sensational!  What a treat for Thanksgiving or Christmas. If you like the taste of pumpkin and you like rice pudding, you'll love this perfect combination. The ingredients are healthy, and the recipe is as easy as just making rice.  In addition, it is allergy friendly as it has no eggs and can be made with coconut milk. I love that the recipe meets gluten free, vegetarian, and vegan standards. I was intrigued with the idea of adding pumpkin puree to this already creamy dessert, and I wasn't disappointed. I would have loved to have topped it with whipped cream or coconut cream, but whipped cream is my greatest weakness and just having some in the house , well I would have eaten it all. So if Mama isn't eating it with whipped cream, no one in my house is eating it with whipped cream! I hope you enjoy it.. let me know Author: Judee Algazi Cook Time for Rice: 25 minute...
