Easy Summer Salad with Colors of the Rainbow

There is no better time to make flavorful salads than during the summer when the produce is ripe off the vine, juicy, and plentiful. I like to use tomatoes in the summer as the base of my salads instead of lettuce.  I had company last night, and I made this amazing summer salad! I used most of the veggies that I received from my CSA this week:  tomatoes, cucumbers, fennel, cabbage, celery, red onion, fresh basil, fresh mint, plus I added some sliced black olives and thick slices of avocado sprinkled with cumin. The salad was pretty to look at and absolutely delicious to eat. If you want to make a meal out of it, you can add in a some chickpeas! Too hot to even eat outdoors I made this salad in the morning, covered it well and didn't dress it until we came to the dinner table. Mango Gazpacho ( Zero Points Plus)

Following Weight Watchers? This fabulous chilled soup is ZERO points and you can make it quickly. Talk about veggies; this soup is loaded. Lets face it, it may be well into September, but it is 90 degrees outside. A nice bowl of ice cold Mango Gazpacho will hit the spot! I found this recipe on Pinterest! It sounded interesting, so I thought I'd give it a try. It was definitely different -but very tasty. My adapted recipe called for most of the end of summer vegetables: tomatoes, peppers, red onion, garlic, cucumber, corn on the cob kernels, and mango. Using my blender, it was easy enough to make. I served it in these cute little bowls. The presentation was lovely and everyone seemed to like it. It is certainly healthy and the best part as I said is that on Weight Watchers it is Z ero Points Plus .   The soup itself is a creamy puree, but it is topped with a hearty medley of crunchy vegetables and mango. What I learned at Weight Watchers

Yes, I actually went to Weight Watchers because  I gained weight over the winter. I've been trying to lose the weight on my own, but I realized that I needed some support. Don't get me wrong, I eat well; my meals are healthy real food meals. However, It's the quantity of good food that I eat plus the snacking that puts on the extra weight on me. For the past 2 months , I've been losing 3 pounds and gaining it back on the weekend. I felt out of control. In desperation, I went to a Weight Watchers meeting. The lecturer was interesting, helpful and inspiring! I learned a few tips that I think will get me on track . First of all, the lecturer  was older and  slim ( I liked that) , and she said she was a vegetarian ( like me).I was very curious to hear what she ate and how to start to approach trying to lose weight and stay motivated.I find as I am getting older, I have less discipline and patience for the thought of  food deprivation.  I learned that on Weight ...
