Creamy 20 minute Zucchini Soup ( zero points)

Quick and easy describes this simple zero points creamy zucchini soup. The six vegan ingredients are just literally thrown into a soup pot, covered with vegetable broth, brought to a boil , simmered for twenty minutes, blended ( immersion blender is easy) and served. Did I mention the soup is ZERO points on Weight Watchers!
It has a mild but soothing flavor that fits well with most meals. That beauty of this low calorie/ low carbohydrate zero smart point soup is that once it is prepared,  you can enjoy it immediately just the way it is, or if you don't mind adding points, it can be served two different ways. Choose one!

Optional 2 extra points

1. Blend each bowl with 1/4 of a fresh avocado just before serving or
2 .Blend each bowl with 2 Tbsp. Greek yogurt before serving.

Either of the choices adds just 2 smart points to each serving but then produces a richer, creamy, satisfying soup that is still naturally gluten free ( what does naturally gluten free mean? ** see my notes below)  . I
This zero smart points soup is perfect if you are in a hurry but want to serve a healthy meal. It cooks in just 20 minutes and freezes well. Eat some: Freeze some .
If you grow an abundance of zucchini in the summer, you now have another recipe to make and freeze. Pin it now for later.

Author: Judee Algazi at Gluten Free A-Z Blog
Prep Time: 10 minutes
Cook Time: 20 minutes
Serves: 6 bowls

Ingredients:
1/2 large onion, chopped or quartered
2 garlic cloves, chopped
2 med-large zucchini
3 stalks of celery, sliced
1 and half cups of water
32 ounces of vegetable broth
Optional: 1/8 of an avocado per bowl or 2 Tablespoons of Greek yogurt per bowl
Topping: cucumber, tomato, and red onion chopped small

Directions:
In a medium soup pot, add the onion, garlic, zucchini, celery, water and vegetable broth. Bring to a boil and then lower the heat to a simmer and cover the pot. Simmer for 20 minutes or until vegetables are soft. Blend the soup and eat it just the way it is which is the way I like it !
Another option is to blend in an 1/8 of an avocado to the soup with immersion blender just before serving per bowl. I don't care for the taste of heated avocado - so after my soup is hot, I blend in the avocado just before serving. If you prefer to use the Greek yogurt add 6 Tablespoons of Greek yogurt to the soup and blend just before serving. Top with the chopped cucumber, tomato, and red onion.

My Notes:
Most unprocessed foods are naturally gluten free

1. Naturally Gluten Free ** Gluten is in only 3 ingredients : wheat, barley, rye and any processed products made from these ingredients ( ex: soy sauce, ) . Vegetables, fruit, meat, chicken, eggs, milk in their natural state are all "naturally gluten free". Therefore many real food recipes like this one are naturally gluten free because they are not processed and don't have anything added to them,. ( oats are gluten free, but because of cross contamination on the fields and in the processing factories- it is essential to buy only oats or oatmeal that is labeled gluten free) .
Weight Watchers?

2. Are you following Weight Watchers? The basic soup recipe is Zero Smart Points
When you add the avocado or Greek Yogurt it becomes 2 Smart Points!!

Perfect for Passover

3. Looking for healthy Passover Recipes? Everything in this recipe is Kosher for Passover.. Perfect for a Passover spring brunch! It's also parve, making this recipe permissible for a regular Seder or the perfect choice for a vegetarian or vegan Passover Seder.

What is Pterygium and Pinguecula ?

[Extracted from the webpage of www.healthscout.com] A pterygium is a fleshy growth that invades the cornea (the clear front window of the eye). It is an abnormal process in which the conjunctiva (a membrane that covers the white of the eye) grows into the cornea. A pinguecula is a yellowish patch or bump on the white of the eye, most often on the side closest to the nose. It is not a tumor but an alteration of normal tissue resulting in a deposit of protein and fat. Unlike a pterygium, a pinguecula does not actually grow onto the cornea. A pinguecula may also be a response to chronic eye irritation or sunlight. Although pterygium and pinguecula sound like mysterious, arcane diseases, they are actually quite common, usually benign eye conditions. These lesions appear as a whitish-yellowish bump or fleshy "growth" on the exposed conjunctiva. If the bump appears only on the white part of the eye, it is called a pinguecula. If it appears to "grow" onto t

What is Angioplasty and Stenting ?

[Extracted from www.vascular.co.nz] An angioplasty is a procedure where a balloon is passed into your artery on the end of a tube (catheter) and is inflated (blown up) to treat a narrowed or blocked artery. The initiator of this technique was Charles Dotter , a radiologist in Oregon who started this work in 1964. The angioplasty technique means that surgery may be avoided in many cases. There are two techniques for performing angioplasty - transluminal and subintimal. In the transluminal technique the balloon is placed in the centre of the artery (in the lumen) where blood would normally flow. In subintimal angioplasty ( Bolia, 1989) the balloon is intentionally placed within the layers of the arterial wall. As far as the patient is concerned, angioplasty is very similar to an angiogram except that a slightly bigger catheter is used and therefore the risks of bleeding are slightly greater. For

What is Down Syndrome and its Causes ?

[Extracted from the webpage of  "Downsyndrome.about.com"] Down syndrome is caused by an extra number 21 chromosome. But what does this really mean ? To really understand what causes Down syndrome, you need to have a thorough understanding of what chromosomes are, and what they do. Genetic Information The easiest way to think of chromosomes is as packages of genetic information. The human body is made up of all different types of cells and inside each of these cells are our genes. Genes are the units of inheritance that are passed from one generation to another. They are located in every cell of our bodies and they provide the instructions for every structure and function of our body. Humans have about 25,000 different genes. Rather than having all 25,000 bouncing around inside cells individually, our genes are located or packaged on chromosomes rather like pearls on a necklace. Genes Genes are made of DNA which is a molecule made up of four different chemicals cal
