Green Tea and Clean Eating

      At the core of CE is removing processed foods from your diet and choosing unrefined, "unmessed with" better alternatives. If you are a tea drinker, it is preferable to chose green tea over regular black or Oolong. Why? Green tea isn't fermented in the production process, which leaves it's natural antioxidant powers largely intact. While black and Oolong teas are still healthy, green tea is more so.  If you are looking for an additional beverage to add to your diet, green tea ( hot or cold ) should be at the top of your list.


     
     Tea drinking in general has been scientifically shown to aid in digestion, increase metabolism, lower blood pressure and cholesterol levels, and is a powerful aid to your immune system. It's a win/win/win all around. The only drawback is caffeine content - if you are sensitive to caffeine, or are trying to reduce the amount you consume, be sure to look for decaffeinated teas.

     Green tea does taste different than regular black tea - so for some, there can be an adjustment period...it is different. Buy a few different brands, and if you don't like one, try a different one. Also, make it easy for yourself if you want to incorporate regular tea drinking into your consumption. Another Falafel Cracker Recipe with Za'atar ( GF)

I know I made falafel crackers last week , but this is a totally different recipe. It's lighter and crispier than the previous recipe, so you might want to give these a try.  I had never made crackers before last week, but they are really fast, easy, and fun to make. A batch of these 50 crackers from start to finish took me under 30 minutes ( I didn't count the 15 minutes of chill time). In addition, they are gluten free, dairy free, egg free and delicious. We love falafel and it's interesting spices,  so naturally I knew we would love these tasty falafel flavored crisps. What makes them taste like falafel? Lebanese Roasted Eggplant Salad

Roasted tangy eggplant salads, like this one, have been popular in Middle Eastern countries for centuries. I think they taste fabulous, are easy to make AND are really healthy too. This  recipe is actually my cousin Elaine's recipe who is an experienced and authentic Middle Eastern cook. She invited us for brunch and served a number of memorable dishes. Although everything was very good, her tangy roasted eggplant was my favorite . Mixed with lemon, garlic, and other herbs and spices, the eggplant salad was superb. Extra note : Not only is this recipe naturally gluten free and vegan, all the ingredients are permissible for Passover. What a great appetizer or side this would make for the holiday!
